Once upon a time

Once upon a time there was a girl called Rachel. 

Rachel was a tired girl, so she didn’t wake up until 11:30 on Saturday morning.  When she woke up, she had a breakfast of challah, an egg, and some carrots and hummus.

Mid-afternoon, I made some goat cheese pastries.  Very simple… just cut the puff pastry into 3 inch squares, put a couple of tablespoons of goat cheese in the middle of each square.  Brush the edges of the square with beaten egg, then fold them together into a pretty diamond.  I did not fold mine very prettily… but fortunately that didn’t affect their taste :)   I brushed the folded diamonds with beaten egg and baked them at 400 degrees for about 20 minutes.  And voila!

What a quick, easy and delicious snack!  Plus, they feel very elegant and out-of-the-ordinary.  The combination of the puff pastry and the goat cheese make you feel like you are eating something more special than the average snack.

Mid-afternoon I also ate a fortune cookie.  This was my fortune….

So I guess I need to live with more hope?  Well… I hope that this fortune also applies to women, since I don’t really want to die a happy man.

If today were my last day and I wanted to go happy, I just might request my last meal to be pumpkin oats in a jar.  A nutella jar, to be exact.  So that’s what I had for dinner (along with an unpictured orange and another goat cheese pastry.)

I followed it up with a dessert of various types of Lindor truffles and a double-stuff golden oreo.

We called S’s family in Switzerland this evening.  While we were on the phone with them, they sent us this picture.  They made us a picture in the Switzerland snow :)

Wrappin it up

I am so happy that it is Friday.  I don’t think that I could make it through another weekday similar to the weekdays that I have had this week.

From computer problems (EVERY SINGLE THING that I try to do on my computer, every program I try to access, every thing that I usually do for work that I just am trying to do, DOESN’T WORK) to tooth problems to house problems.  From getting taxes ready to getting ready for S’s family.  Not sure if I mentioned it, but his father and Grandmother are coming to visit from Switzerland in about a month. 

My sister is also coming to visit!  She and her boyfriend, who both currently live in Ohio while they finish school, have purchased tickets to visit March 4-11.  They have never been here before, so that’s really exciting.  I can’t wait for her to meet S, JB and Mendy.  And I also can’t wait to show her my house and where I live!  The west coast is so different from the east, where we grew up.

I had a celebratory breakfast of pumpkin oats with hazelnuts.

I love hazelnuts.  I am just about finishing up the ones that we brought back from Switzerland, so will have to find some more here.  It is more difficult to find hazelnuts in the US, and hazelnut-flavored or infused items.  I’m not sure why they are so much more popular in Europe than they are here, because they are absolutely delicious!

Mid-morning I snacked on a gala apple and two clementines.  We got these clementines from Trader Joes, and they are SOUR!  S picked them out (they are one of the few types of fruits I can actually convince him to eat) but he won’t eat them because they are so sour.  So looks like I will be eating all five pounds myself!

Lunch was a turkey salad.  Nothin’ new to see here, folks.

I spent almost the entire day today on the phone.  Either for meetings, or with the stupid help desk at work to try to get my laptop up and running properly.  The good news is that I now have proper access to my email and most work items located on the corporate servers.  The bad news is that my DB2 connections as well as all my reporting capabilities and database update abilities are still out of commission.  And these are much more complicated and difficult problems to solve :(

Mid-afternoon I had a cheesecake break.  Cottage cheese cheesecake pudding with Cinnamon Toast Cunch and a crumbled Swiss butter cookie.

Then I made my escape to the gym.  Once again, it wasn’t that crowded!  Second day in a row!  Could this mean that the New Years resolution crowd is finally admitting defeat and surrendering to the couch?  We are about at the six-week mark… this could be the case…

I did 30 happy minutes on the stair climber.  Then I made a trip to Tar-jay for groceries.

When I got home, I snacked on a Kashi Roll bar.

For dinner, S requested breaded chicken tender wraps.  I made mine chicken ceasar, with mixed cheese and some ceasar dressing.

I can’t believe it’s Valentines Day this weekend.  I don’t think we will be doing much – S doesn’t really buy into American commercialized holidays like this.  Sometimes being with a foreigner is kind of a bummer :(

It’s like drilling teeth…

Sorry I have been gone the past couple of days.  I am happy to announce that I was setting up my new computer!  It has been a huge pain in the butt, I have had a lot of trouble migrating the data from my old computer onto my new one.  Oh, and my old one’s hard drive failed last night.  Completely failed.  So unfortunately I did lose some stuff – fortunately, we had already migrated most of it onto an external hard drive.  It has been soooo frustrating, but I’m thrilled to have my new PC!!!

So about my day…

I never hated going to the dentist.  In fact, when I was younger, I actually kind of liked it.  I liked the feeling of my teeth being really smooth and cleaned when I was done.  Plus, I got a free tooth brush! 

Another reason I never disliked the dentist was the fact that I never had a reason to.  Unlike my sisters, who were constantly complaining about their dentist and orthodontist appointments, I never had any cavities.  I never had braces, never had any tooth problems whatsoever.  The worst tooth experience that ever happened to me was when I had to have my wisdom teeth removed (three of them) and that wasn’t even that bad.  I got to eat ice cream for a week!

I am embarrassed to say that I haven’t been to the dentist since I moved to California (three and a half years ago).  I know, shame on me.  So this week, I decided to do something about that.  I found a dentist.

I was a little apprehensive about finding one.  I am somewhat particular about the doctors that I go to – it’s hard for me to find one that I feel I like and can trust.  And moving to a new place, where I didn’t know anyone, I didn’t really have anyone to ask for recommendations.  I finally sucked it up and picked a dentist from my insurance provider’s website and had my appointment this morning. 

First of all, let me say that I chose a good dentist.  I liked her from the start, when I saw her office and she welcomed me to her practice.  The reason that I chose this dentist was because of some of the things they had written on their website – specifically that they really cared about individuals and saw a limited number of patients per day so that they were able to spend time with each one.  I really liked that. 

The dentist and hygienist were great.  They cleaned my teeth like those babies had never been cleaned before.  Seriously.  It hurt, but felt good at the same time, you know?  And again, I take a lot of the blame because I haven’t gotten a good dentist teeth cleaning or checkup in a LONG time.  They did full x-rays, the works. 

And…..  I HAVE FOUR CAVITIES!   Grrrrr.  I was NOT a happy camper (although I am also not a surprised camper).  So now I have to go back again to get them filled.  And I am scurred!  I have never had a cavity before, does it hurt???

Before I went, I had a breakfast of cottage cheese cheesecake pudding with a chocolate granola bar crumbled on top.

After I got home from the dentist (which took almost 3 hours!!!  I was so glad I had a first-thing-in-the-morning appointment!) I snacked on some dried strawberries and dried kiwis.

The strawberries are just ok.  I wish they didn’t have so much sugar on them.  But the kiwis are delicious!

Lunch was a hugh jass with chicken, veggies, olives, cheese, olive oil and vinegar.

And look what was sitting on the kitchen table as I ate.  This awesome shot glass that S won at work in some sort of developer’s raffle.  Ha, can you tell we work in Silicon Valley???

Mid-afternoon I had some dried yogurt leather that I made in the Excalibur.  It was delicious!  Next time I am going to make it a little bit thicker, though.  I didn’t realize how much it thinned out when it dried.

I also had a big bowl of kettle corn!  I haven’t had popcorn in a while and forgot how much I love it.

Although I was sooo exhausted today (S and I were up until 1:30 trying to revive the hard drive on my old computer, to no avail) I went to the gym in the afternoon.  The good news was that it wasn’t that crowded.  I got a stepmill and did 30 min (fat burner program, level 13.)  It was TOUGH, I was tired.  And my legs are still a little sore from my 10-mile run on Monday.

A recap of my other workouts this week, which I am pretty happy about:

  • Tuesday – 30 min on the elliptical machine with arms.  I hate the elliptical with arms.  Don’t as me why.  I’m not a huge fan of the regular elliptical either, but I like it a zillion times more than the one with arms.  But every single other machine was occupied when I went, so I sucked it up and did it.  I always feel better after I do it, too, since I don’t do it very often and it varies my workout.
  • Wednesday – 30-day shred, level1, for the third time!  And I have to admit, it is getting a little easier.  I am really proud of myself because anyone who reads my blog knows that I HATE weights and I HATE doing ab work.  This is making me do both.  I think the key is that it does it in very small increments (3 min and 1 min segments) making it more doable and less torturous to me. 

When I got home, I made dinner of rigatoni with olive oil, spices and parmesan/romano cheese.  It was quick and easy.  I even ate mine out of a plastic tupperware container because only one bowl was clean and I gave it to S.  All the others are in the running dishwasher as I type this.

And for dessert?  A handful of Harry and David chocolate covered pretzels.

I am currently watching the season premiere of the new Survivor.  Does anybody else watch this show?  I have to admit, I think it is my favorite show on television.  I love Survivor!

Trippin

So S and I recently bought tickets to go to Pittsburgh to visit my family.  We will go during the last week of June/first week of July, and I am VERY excited!

Now, right after purchasing these tickets (of course it had to be right after purchasing them!), I got an email from USAirways stating that my frequent flyer miles were about to expire.  I had enough to buy a round trip ticket in the US, and figured better to use them than to lose them.  So I just purchased tickets to go to Pittsburgh (by myself) for the last week of April/first week of May.

I haven’t been back to Pittsburgh for two years, and now I will be going twice in two months.  Oy vey.

The good news?  I will be there for the weekend of May 2nd… which is the Pittsburgh marathon and half marathon.  Now, I have not been running at all and so pretty much have given up hope of running the full marathon.  But at least I can do the half.  That’s better than nothing, right?  This is where I have to battle my all-or-nothing thinking (and my inner two-year-old.)  That part of me wants to cross my arms, scowl, and say, “If I can’t do the full marathon, I don’t want to do it at all!!!”  But that is completely unreasonable, not to mention stupid, and it sounds like a spoiled little brat.  So I want to run the half.  I have already told both of my parents that I will be doing it, as well as my sister.  I’m hoping that now the accountability and peer pressure support will help me to do it.

Plus, I will be meeting Morgan (and Solomon) there as well, where they will also be running the half!  I can’t wait!

Anybody else who will be in the Pittsburgh area at this time and is interested in running, or just meeting up, let me know!!!

Anyhow… work was crazy this morning.  Breakfast number one was pumpkin oats.

Breakfast was really early today, so mid-morning I had the two remaining homemade quiches, and a chicken egg roll.

S and I are currently doing Operation Eat-Everything-In-The-Freezer because we have an insane amount of food in our 2 freezers.  Yes – 2 freezers for 2 people.  One is a normal sized freezer on top of our fridge, and one is a separate, standalone 13.7 cubic foot freezer.  And both are completely PACKED with food.  So you see our problem?  This is why I am eating an egg roll for brunch.

Late breakfast leads to late lunch.  I had some chicken, celery and hummus with a pear on the side.

So after lunch I decided I should try to make one more last-ditch effort to at least see if I could possibly be able to do the full marathon when I go to Pittsburgh.  The Pittsburgh marathon is 12 weeks away, and I found a 12-week training schedule on the Runner’s World website, which I was really excited about.

But then I realized that the first week, the run was 13 miles.

And I wasn’t so excited anymore.

After a quick snack of some Weetabix cereal…

I unexcitedly put on my Garmen and dragged my butt out the door to try to run 10 miles.  I figured that I had to at least be able to run 10 miles this week if I want to even think about running 13 miles this weekend to kick off the training.

It was HARD.  I was TIRED.  My legs were SORE.  But I did it!

Run stats:

  • Distance: 10.17 miles
  • Time: 01:31:15
  • Avg Pace: 08:58 min/mi

Not too shabby.  At least I know that if I don’t do the full, I should have no problem getting the half-marathon done.

I was starving when I got home.  Right away I had two big pieces of my homemade challah:

Challah for the Super Bowl

I finally baked my own bread for the first time!  I mean all by myself, no bread machine or mixer or NUTHIN!

No better way to watch my husband-to-be, Peyton Manning, lose the Superbowl :(

 

Rach vs. yeast, Round 1.  Ding ding ding!!!

I used a recipe from the Food Network website that my mother sent to me.  It was good because it didn’t require that much time to prepare and to rise (perfect for first-timers) and it allowed me to watch Peyton at the same time.

Bistro Challah (with some Rachel modifications)

*  4 teaspoons active dry yeast
* 1/3 cup sugar
* 1 cup warm water (about 110 degrees)
* 6 tablespoons unsalted butter, melted
* 3 eggs
* 3 1/2 to 4 1/2 cups flour
(I used 4 1/2… the dough was really sticky so I kept adding…)
* 1 tablespoon salt
* 1 beaten egg

 

Place the yeast, sugar and warm water in a mixing bowl. Stir and let stand for about 10 minutes, until creamy and foamy. Add the melted butter and eggs and mix well.Combine the flour with the salt. Add it to the yeast mixture, 1 or 2 cups at a time, until it forms a soft dough. Place the dough on a well-floured board and knead until the dough becomes smooth and elastic, about 5 minutes. Place the dough in a large, well-greased bowl, then flip the dough over to coat with oil. Cover with plastic wrap or a towel and let stand in a warm place for about 1 hour, or until doubled in size.

Preheat the oven to 375 degrees. Punch the dough down, and separate it into three pieces.

Roll each piece into a long cylinder.  The pinch the ends of the three cylinders together and braid the bread.  After braiding, pinch the other ends of the three cylinders together.

Brush braided loaf with beaten egg.  Bake for about 45 minutes, or until the bread is golden brown and sounds hollow when tapped. Let cool before slicing.

I have to admit, this is one of the recipes I have made that I have been the most proud of.  It’s not perfect by any means, but it helped me to overcome my fear of all things containing yeast.  Woo hoo!

Ice skating!

Saturday was fun, fun, fun.  Except for the fact that S was still obliterating my computer.  But I’ll just focus on the good parts.

I woke up at 11.  That was a GREAT part.  Lunch was a chicken salad with romaine, broccoli, bean sprouts, grilled chicken breast, cheddar cheese and croutons.

I was so excited to go ice skating.  I haven’t been in years!  When I put on my skates, I felt like a kid again!

When we got home, I made a late dinner by using up the second refrigerated pie crust I had.  They come two to a box…. who knew?!?!  I decided to make a play on pastry appetizers I have seen before.

Pie crust appetizers

2 tbsp butter
2 tbsp    cup finely chopped onion
1 smoked sausage, chopped
1/4 teaspoon salt
1/8 teaspoon pepper
1 refrigerated pie crust
1    egg, beaten

In a skillet, melt butter over medium heat. Cook and stir onion in butter just until tender. Add sausage; cook 3 minutes, stirring frequently. Stir in salt and pepper. Cool 10 minutes.  Meanwhile, heat oven to 400°F. Unroll pie crust. With 3 inch round cutter, cut 6 rounds from the crust.  Spoon rounded teaspoon cooled meat mixture onto half of each pie-crust round. Fold dough over filling; press edges with fork to seal. Place on ungreased large cookie sheet. Brush with beaten egg.  Bake 12 to 15 minutes or until light golden brown. Serve warm.

Again, not the most beautiful….  I took the few leftover pieces of pie crust and wrapped them around mini cocktail hot dogs.

Quich-en in the kitchen

My computer was out of commission for most of (ok…. all of) this weekend, so I’m going to try to recap.  I will split this into multiple posts so that this doesn’t become one boring monster post!  I had some good and fun cooking experiments this weekend I wanted to share!

Friday was when the trouble started.  We decided to stay in and made a fire in the fireplace.  I had a dinner of weiners and toast:

When we were done with dinner, S asked if he could “make my computer run better”.  Um… That question should have made me stop and take heed.  But no… I told him he could.  This is my old laptop we were talking about (my new one is still out of commission until I receive, partition, format and insert the new hard drive… since I locked myself out of the one that it came with…)

I consider myself to be relatively computer savvy… I work in IT for a living and have two degrees in IT and computers.  But when S starts working on my computer, I never have any idea what is going on.  And Friday night was no exception.  Before I could say “What the hell are you doing to my computer”, the screen was blue and there was a bunch of text flashing by.  So I just kept my mouth shut and let him do his thing.

A few hours later, he was still doing his thing.  So I decided to… bake!  I knew if I made something sweet S wouldn’t eat it.  And I had two refrigerated pie crusts to use up.  So I decided to make some mini quiches.

They turned out awesome!  Maybe not the most beautiful, but they tasted delicious.

Mini Quiches

1 refrigerated pie crust
1/2 cup + 1 tbsp shredded cheese
(I used a blend of cheddar and mozzarella)
1/4 cup chopped veggies (I used broccoli and onions)
1/4 cup chopped meat fillings of your choice (In some I put salami, in some I put smoked sausage, and in some I put chicken.)
2 eggs
1/2 cup milk
1/4 teaspoon nutmeg
salt and pepper to taste

Heat oven to 375°F. Spray 6 muffin cups with cooking spray.  Place pie crust flat on cutting board  and cut 12 rounds from each crust. I’m not sure of the exact size I used (I used my jelly belly jelly beans container lid!!!) but big enough so that Press 1 pie crust round into bottom and up sides of each muffin cup.  Approximately 4 1/2 inch diameter?  Place 1 1/2 tablespoon cheese in each cup. Top each with your veggie and meat pieces. In a bowl, beat eggs, milk, salt and nutmeg with fork until well blended. Pour mixture into crusts, filling to within 1/4 inch of top.  Bake 25 to 30 minutes or until golden brown. Cool 2 minutes. With tip of knife, lift quiches from cups. Serve warm.

I also had a few handfuls of Jelly Belly’s.  While S worked, I finished off my library book that was due the next day.  I highly recommend Little Bee by Chris Cleave.  It was a great read!

Living in the Past

Happy Thursday, friends!

My Thursday started off with a nutella-covered bagel and a greek yogurt.

Mid-morning I was hungry again, so I had…. pumpkin oats!  I haven’t had those for a while.  I almost forgot how good they were!

I was really cold before I had the oats.  But after eating just a few bites, I was totally warm.  In fact, I even got hot.  I LOVE OATMEAL!!!

Mid-morning I saw this article online about Michelle Obama’s remarks about her daughter’s weight.  Did anybody else see or hear about this?  Stuff like this is so ridiculous.  The country wants good role models, they complain that we are not doing enough to keep our children healthy and prevent childhood obesity.  But then, when someone in a visible position tries to talk about their own life and experience, and how they tried to help their own children live a healthier life, people are upset. 

Come on now, people.  You can’t have it both ways.  You want open, good role models leading by example?  Then don’t say they are promoting eating disorders when they talk about helping their children to maintain a healthy weight.  Believe me – as someone who has had an eating disorder, I am the first one to be uber sensitive about triggers and the like.  Particularly those in the mother-daughter relationship, because those are so powerful.  But I truly believe that the Obamas are NOT instilling unhealthy weight or body image issues in their children.  They are just trying to raise them to be the best, healthiest children they can be!  Anybody else have an opinion on this?

I enjoyed having them as a treat, since they remind me of my childhood and I haven’t had them in so long, but I don’t think I will be buying them again any time soon.  They were so sour they practically turned my face inside out!

I had an early dinner of two honking pieces of pizza.  This was, of course, S’s leftovers form dinner last night.

I don’t know why I eat the pepperoni.  Of course it tastes good, but I always feel disgusting afterward.  Every time, I say – next time I am going to pick off the pepperoni!  But do I?

This evening S and I had a conversation about… well, pretty much about me.  I’ve been really restless lately, and have felt like something is missing from my life.  The problem is, I don’t know exactly what it is or how to get it. 

S said that he thinks a large part of me is really living in the past.  Although I don’t do that with everything… I do agree with him that there are a few select things that I have a hard time letting go of.  But I’ve reached this weird point in my life where I just feel stuck.  I want to let go of the past, but that’s a lot easier said than done.  I want to move forward, but am not entirely sure how.  And at the same time, I do my best to be mindful and live in the moment – to just enjoy life as it comes at any given time.

How do I reconcile these things?  Unfortunately… I have no idea.  How do I move on from the past, figure out my future, while living in the present???

Locked out

Today I got locked out.  No, not out of my house.  Out of my NEW LAPTOP.  But more on that in a second.

Breakfast was a bagel with cream cheese, and some dried apricots.

Lunch:  Leftover beef stroganoff.  Not gonna lie, it was my dinner today too (as you will soon see.)

S comes home from work, and I decide to work on my new laptop.  I have slowly been transitioning from the old one for work to the new one – I had to migrate all my data, set up the new one, etc.  The next thing I had to do was create a hard drive password (it is required by my company.)  Basically, when you set this password, as soon as you turn on the computer it asks you for the password before it will boot up or do anything.  So… I go into BIOS to set the password.  S was sitting right next to me watching as I did it.  I had to type in the new password, and then type it in a second time to confirm it (as is always the case when you are creating a new password).  I did that, it was fine.  Then I restarted the computer and it asked me for the password to start it up.  I typed it in and… it doesn’t work!  I tried every possible typo combination just in case I made a mistake typing it in to BIOS (TWICE!!!) and it will not let me in my freaking computer.  It is faulty somehow, it didn’t save my password as I entered it.  So I can’t boot up my new computer!  I spent the morning on the phone first with my company help desk, then they transferred me to desk side support, and then finally hardware support.  And the bottom line is, if you forget (or can’t get in with) your hard drive password, basically you are screwed.  There is no way to hack in or get around it.  You can’t do ANYTHING on the computer, period.  So they have to send me a new hard drive for my brand new computer.  And I have to reinstall windows and everything, and then take it in to desk side support to have all my information migrated from my old laptop onto the new hard drive.  AAARRRRGGGGHHH!!

After all that aggravation, I didn’t eat dinner until really late and was glad I *still* had leftover beef stroganoff to heat up.  I had a Hawaiian sweet roll on the side – LOVE those.

After dinner I had two Pim’s cookies.  I had never heard of these before, but S was telling me that Pim’s were one of his favorites in Switzerland.  I happened to see them when I was at Tarjay cruising the cookie aisle (yeah, you know… some people cruise bars or pubs… I go for the cookie aisle) and so I picked them up for him.

They are eh – ok.  The chocolate part is good, but the part underneath is cakey, not crunchy, and I didn’t like it that much.  Plus, I got orange filling ones (that was all they had) and I’m not a huge fan of orange-flavored stuff.  I would like to try the raspberry flavor – they sound much better to me.  Don’t get me wrong, though, these were definitely edible and I managed to force down both ;)

Before I went to bed, I had a plate of dried fruit.  Golden raisins, dates, prunes and apricots.

This was a good evening snack.  Not candy or some kind of really unhealthy dessert… but dried fruit. 

I bought some treats online today… dried kiwi, dried goji berries, dried strawberries and some chestnuts!  I can’t wait for my goodies to come!!!

House arrest

S’s car is broken, again, so he took mine to go to work today.  Which means I am stranded at home.

I was really craving eggs this morning.  Breakfast was an omelette (3 eggs) with veggie sausage and some cheese:

It was a nice break from my carb-loading I have been doing every morning for the last month or so.

Which left room for my carb-filled lunch… leftover sushi!

Actually, it wasn’t all that carb-y.  I just don’t usually eat rice, so I feel like it is really carb-y for some reason.  I like the fact that:

  1. I am eating rice
  2. I like the rice (it tastes good in sushi!)

So now I have two places where I can count on rice tasting good.  Rice pudding, and sushi.

Mid-afternoon I started to get a little antsy.  I wanted to go to the gym, but of course I couldn’t because I didn’t have my car.  And the more I thought about the fact that I didn’t have my car… the more I actually wanted to go somewhere.  Isn’t that how it always is?  Most days, you can’t drag my ass out of the house during the day.  I’m working, and I’m lazy and don’t want to change out of my pjs.  But as soon as you take my car away and I can’t go anywhere… all of a sudden I become little miss wannabe-jet-setter.  Ha.

The only way to quelch my cravings to leave the house, of course, was to drown them in a raspberry pomegranate bar.

Then I was craving chocolate cake and remembered my Vitatops in the freezer!  Haven’t had one of those in a while.  I chose a Chocolate Fig one.

It was good, but a little dry.  I still like the deep chocolate ones the best.

I don’t give a fig.  That’s what my Daddy used to say.

I was still feeling snacky while waiting for S to get home.  Late afternoon I am always feeling snacky and usually counteract it by going to the gym.  Which of course I couldn’t do.  But I did something just as good…. I broke out Jillian’s 30-day Shred dvd for the first time!

I just did level 1, but it was tough.  I didn’t have any problem with the cardio parts, and even the ab parts weren’t as hard as I expected (although I was on level 1….)  But the strength moves were tough!  Luckily, at the advice of Rebecca, I was ready with my light weights.  Because Jillian does many, many reps and I thought my arms were going to fall off!

I was sweating, and quite proud of myself, when I was done.  It was only 20 minutes, but I felt like I got a workout!

Before S got home, I snacked on some cucumber with salsa.

I forgot how much I love salsa!

I had planned and begun preparation for dinner earlier in the day.  I decided to make beef stroganoff in the slow cooker.

I diced up 1/2 an onion and 1/2 a clove of garlic.

Rinsed about a half a package of slice mushrooms,

And threw it all in the slow cooker, together with about a pound of beef cut into cubes, 1/2 tablespoon of paprika, and 1 teaspoon salt.

I covered and let it cook on low for about 7 hours.  Then, when S got home, I mixed together 1/2 cup sour cream and 1 tbsp flour and mixed it into the slow cooker with the beef mixture.  I let that sit for 15 minutes, while I cooked up some egg noodles, and then served!

And forgot to take a picture.  Sorry :(   Oh well, I’m sure you will get a picture of it tomorrow for lunch, because I will be eating the leftovers!

Afterwards I had cottage cheese cheesecake pudding with frozen grapes.  I love frozen grapes!

Followed by a little bowl of jelly beans.  Can you believe it?  I actually made myself pour some out into the bowl so that I didn’t eat the entire rest of the container.

I love NOMing on these while I watch the Biggest Loser.

And right before I hit the sack, I had some sour patch kids and swedish fish – one mini packet of each.

S is (still) outside working on his car as I type this.  I hope that he has it fixed by tomorrow so that I’m not stranded at home again!
